I thought I'd pop in and watch 20 mins or so, 80 mins later and I was hoping there was more.
Also, if you're 35 and looking to get into the kitchen, be prepared for years to disappear as the monotonous grind strips your days away from you. 8 years felt like 2, a month feels like a week, I couldn't remember yesterday but I know what I ate last Tuesday for a snack….

For Kush, it’s not about the ego. It’s about the plate and the food that goes on it.
I applied to cook at a nearby country club. When I walked in, I seem to have been the only woman probably inside that kitchen a very long time. I had a really nice interview that Chef told me to come back in a week prepare three meals and bring my own knives. As I was walking out the door, I asked what the salary would be and when he told me $19,000 the blood trained for my face. I’m waiting tables at high and restaurant making more money than my boss and I cook privately for myself.
Kush talking about the lack of positive feedback loop (and the reputation kitchens have for being less than pleasant socially) is why I went the other direction.

i would love to see you guys have normals cooking with/against a cook from a place you can trust that is on the level of home cooking just to see the difference of pace and urgency.

Working for that billionaire sounds insufferable. Professional kitchens sound pretty bad in my opinion but probably preferable to working with such unbelievable bastards
