Today I’m trying out some small batch 1970s recipes for two from Better Homes and Gardens!

STUFFED ZUCCHINI (pg 68)
1 zucchini (6 to 7 inches long)
1/4c water
1Tbsp butter
1/4c soft bread crumbs
2Tbsp chopped pimiento stuffed olives
2Tbsp shredded sharp American cheese

Halve zucchini lengthwise. Scoop out pulp, leaving 1/4″ shell. Chop zucchini pulp (should measure about 1/3 cup); set aside. Place zucchini shells, cut side down, in an 8″ skillet. Add water. Cover and simmer for 5 to 6 minutes or till just tender. Drain, Turn shells, cut side up, in same skillet. Sprinkle with a little salt.
Meanwhile, in small saucepan, cook chopped zucchini pulp in butter for about 3 minutes or until squash is tender. Add bread crumbs and olives; toss to combine. Spoon bread crumb mixture into zucchini shells. Top with cheese. Cover and heat for 2 to 3 minutes or until cheese is melted.

STREUSEL COFFEE CAKE (pg 73)
1/3c granulated sugar
1/4c softened butter
1 egg
1/2tsp finely shredded lemon peel
1/4tsp vanilla
3/4c all purpose flour
1tsp baking powder
1/4tsp salt
3Tbsp milk

for topping:
1/4c packed brown sugar
1/4c all purpose flour
1/4tsp ground cinnamon
2Tbsp butter
2Tbsp chopped walnuts (optional)

In small mixer bowl thoroughly cream granulated sugar and 1/4c butter. Beat in egg, lemon peel, and vanilla. In a separate bowl, stir together 3/4c flour, baking powder, and salt. Stir into creamed mixture alternately with milk. Turn into a greased and floured 6 1/2 by 6 1/2 by 2 inch baking dish.
Combine brown sugar, 1/4c flour and cinnamon; cut in 2Tbsp butter until crumbly. Stir in walnuts (if using). Sprinkle the brown sugar mixture over batter. Bake in 350 degree oven for 30 to 35 minutes. Makes 1 small cake.

SAUCY MEATBALLS ( pg 22)
1 beaten egg
1 slice white bread, torn up
1Tbsp ketchup
1/4tsp salt
dash pepper
1/2 pound ground beef
1 – 7 1/2oz can semi-condensed cream of mushroom with wine soup*
4oz tomato sauce
2Tbsp finely chopped onion
1Tbsp finely chopped green pepper
Hot cooked rice or noodles

In a small mixing bowl combine beaten egg, bread, ketchup, salt, and pepper and mix well. Shape mixture into 1″ meatballs. Set aside.
In skillet combine soup and tomato sauce. Bring to boiling, stirring occasionally. Add meatballs, onion, and green pepper. Cover and simmer about 20 minutes or until meatballs are cooked, stirring occasionally. Serve over rice or noddles.

Microwave cooking directions:
Prepare the meatballs as above. Arrange in 10x6x2 inch non-metal baking dish. Cook, covered with waxed paper, in countertop microwave oven on high power for 5 minutes, rearranging meatballs once. Drain off fat.
In bowl, combine soup, tomato sauce, onion, and green pepper; pour atop meatballs, stirring to rearrange. Micro-cook, covered, for 5 to 6 minutes, stirring once. Serve as above.
