    Sorry for pun but you are just reinventing the wheel. This method is used in knife factories. But a good DIY option for a slightly convex grind. The better option is the horizontal grinding wheel, if you can find one, finishing with 1500 whet stone. That is plenty sharp.

    Maybe we can use the Swiftysharp(terrible knife sharpener if not known how to actually use it)and turn it into a mini mdf knife sharpener by removing the black cap and replacing the sharpening wheel with a mini mdf wheel that can easily be cut out with a wood saw and shaped into a circle,then put some buffing compound on it and then sharpen your knife with it.
