    Mother of god it's nice to hear a kitchen person telling people to sharpen their knives!! The vast majority of youtube chefs and people I know in real life seem to think the sharpness of a knife is determined by which one you bought. Completely forgetting the most important part of a knife is how YOU the owner maintain the edge. I know several people with very nice, very expensive kitchen cutlery that is as dull as a spoon because they never even thought about having to sharpen them.

    A friend once handed me a kitchen knife that wouldn't cut a pepper and I asked when the last time was they sharpened it. They said "what do you mean? why would I have to sharpen it? I paid $200 for it because it is sharp." I think a lot of people fundamentally misunderstand the knife as a tool.
