    If you grab someone's wrist in this situation, their reflex is to pull. Which means bringing his arm straight like this is very unlikely to work force vs force. A smarter technique here is to use the pulling to your advantage and perform a 'cavalier' wrist lock. The key is to grab the wrist with the hand mirrored to the knife, and place the other hand over the fingers of the assailant (hand over hand) then using his momentum to twist and break his wrist. Look up cavalier wrist lock.

    Any technique used to disarm a knife holds the risk of getting stabbed. No technique is "stab proof ". The best defense is to run but when you can't run this is a very good technique. Action is faster than reaction so as long as he's holding the knife as a threat and not actively trying to kill you with it then this technique has a high percentage for success. I know there are people who will tell you to never grab the wrist but many folks have survived knife attacks grbbing the wrist.
