The hook punch shown there is so deceptive in it's ability to cover distance that stepping back might not do you any good. Notice how a boxer uses his right hook to overcome a conventional jab almost always. I believe that what Sifu Cichon shows to be a valid tactic is a much better way to deal with the situation of a hook punch. He's also been really nice by not cutting the arm before the swing with the bat takes flight.
